AEG STEAM BAKED BUTTERMILK SCONES
Makes 16 scones

The Moist Fan Baking function on my AEG oven is ideal for dry bakery items like these delicious Buttermilk Scones. When the gentle steam that circulates the oven will help them to rise more fully, to create a very moist textured crumb and shiny tender rich golden tops.

To be enjoyed at their best, they should be eaten with chilled clotted cream and a glossy dollop of Strawberry Jam, and when everyone goes wild for cream teas on Wimbledon fortnight, fresh scarlet juicy strawberries make the perfect accompaniment. Enjoy.

450g / 1lb self raising flour
3/4 tsp salt
2 level tsp baking powder
75g / 3oz butter
2 level tbls caster sugar
200ml / 7fluoz buttermilk
3fluoz milk
egg glaze

Prepare the AEG Pro-Combi Steam Oven for baking. Lightly dust the baking tray with flour and add it to the middle shelf. Following the booklet instructions fill the water drawer in the control panel and select the Moist Fan Baking function. Preheat the oven to 200C.

(1) Sift the flour salt and baking powder into a large mixing bowl. Rub in the butter and when it resembles fine bread crumbs add the sugar and mix to combine with the dry ingredients.

(2) Mix the buttermilk and milk together and using a fork combine gently with the dry ingredients to make a soft dough. Turn the dough onto a floured board, and knead lightly. Using a floured rolling pin, roll the dough lightly into a 2cm / 3/4 in thick slab.

(3) Using a round fluted 5cm / 2inch biscuit cutter, Cut into rounds, then transfer the cut shapes carefully to the prepared baking tin.

(4) Set the oven minute timer for 9 minutes and bake until the scones look well risen and the tops look a rich and shiny golden colour. Leave to cool on a wire cake rack.

C.P’s TRUSTY TIPS
For a better shaped scone, always make sure to dip the edges of the cutter into the flour To avoid the dough sticking to the cutter and dragging it’s shape.
Freezing scones is easy-peasy. Simply let them cool down until cold, before placing them in a plastic bag and stashing them away in the freezer for future occasions.

To give defrosted, or a few day old scones that fresh baked appeal. Warm them in the microwave for a few seconds on a low setting, just before serving.
